Blue Mountain Coffee Plant

Jamaican Blue Mountain Coffee, while being the best drink of coffee all by itself, can be prepared in different ways to create variety. Many coffee drinkers have also found iced coffee to he a tasty variation of the hot beverage and a delightful alternative to soft drinks.

BLUE MOUNTAIN COFFEE brewing Instructions
One rounded teaspoonful of coffee per 6 fl. oz. water. Adjust this ratio to suit your own taste preference.
Container in which you are preparing coffee must be clean and odor free.
Select the correct grind for your coffee maker.
If coffee stays too long being  warmed, it can get stale and develop a bitter taste, so, serve coffee while it is hot. 

Iced Coffee Delight
4 to 5 cups prepared Hazelnut
Crème Coffee
2 teaspoons Sugar

Pour coffee into ice cube tray and freeze until firm. Fill two tall glasses with mixture of coffee cubes, flavored cold coffee and sugar. For an extra treat, add whipped cream or condensed milk, or regular milk and serve with a cinnamon stick or ground cinnamon. Serves 2.

Cafe Reggae
Just one sip transports you to Jamaica
1/3 oz Jamaica Rum
1/3 oz Coffee Liqueur
1/3 oz. Crème de Cacao
1 cup brewed Jamaica Mountain Choice
Whipped cream and nutmeg.

Combine the first four ingredients and top with whipped cream and nutmeg. Add sugar if required. Serve over cracked ice.

Cafe Special
4 teaspoons chocolate syrup
1/2 cup heavy cream
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon sugar
1-1/2 cups extra-strength hot coffee

Put 1 teaspoon chocolate syrup into each of 4 small cups. Combine cream, 1/4 teaspoon cinnamon, nutmeg, and sugar. Whip. Stir remaining 1/2 teaspoon cinnamon into hot coffee. Pour coffee into cups. Stir to blend with syrup. Top with whipped cream.

Creamy Coffee
1/4 pint evaporated milk
Ice cubes
4 1/2 level teaspoons instant coffee
1 level tablespoon castor sugar
3 scoops vanilla ice cream

Make the evaporated milk up to 1/2 pint by adding ice cubes. Stir in 4 teaspoons instant coffee and the sugar and blend all in an electric blender until the ice is broken. Pour into glasses and top with ice cream. Sprinkle with the remaining instant coffee and serve at once. Makes 3 drinks.

Holidays Special
1 ½ cups eggnog
2 1/2  shots espresso
2 teaspoons vanilla syrup
ground nutmeg

 Brew the espresso and set it aside. Put  the eggnog in a cold frothing pitcher and steam.  Place 1 teaspoon vanilla syrup into each cup. Add equal amounts of steamed eggnog. Stir to dissolve the syrup. Pour 1/2 the amount of espresso into each mug. Top  off with the ground nutmeg.

Frosted Black Coffee
1/4 pint extra strong cold coffee
2 tablespoons cracked ice
1 scoop of vanilla ice cream

Pour the coffee into a cocktail shaker with the ice. Add the ice cream and shake vigorously. Pour into a tall glass and serve with a straw.

Irish Coffee
(Celebrate St. Patrick's Day all year long)
1 1/2 cups brewed Irish Crème
Flavored coffee
4 teaspoons sugar
4 oz. Irish Whiskey
Whipped Cream.

Warm four wineglasses in hot water; dry the glasses and place 1 teaspoon sugar in each. Pour in hot coffee to within 2" of rim. Mix sugar and coffee; add one ounce Whiskey to each glass and stir. Top with softly whipped cream and serve. Create a stir by having it over cracked ice, using cold coffee or blending to make a daiquiri.

Jamaican Grog
Make It Jamaica Again
1 cup brewed Jamaica Mountain Choice
1/2 oz. each Light & Dark Jamaica Rum
2 teaspoons Coconut Rum
Evaporated Milk, Shaved Chocolate

Combine the first 4 ingredients.
Top with evaporated milk, shaved chocolate. Serve over cracked ice.

Coffee Layer Cake
2 cups butter/soft margarine
500g granulated sugar (1 lb)
4 eggs
4 cups flour
2 teaspoon baking powder
4 teaspoon instant coffee
6 tablespoon milk

Cream butter and sugar until light and fluffy. Add eggs one at a time with a tablespoon of flour and beat well.
Sift the flour, baking powder and coffee.
Fold dry ingredients into creamed mixture, alternately with milk. Pour into two large tins and spread evenly.
Bake at 190 C or 375 F for 35-40 minutes until firm. Serves 9-10 persons.

Icing For Layer Cake
4 teaspoon instant coffee
1 tablespoon boiling water
6 tablespoon butter/soft margarine
3 1/2 cups icing sugar
4-6 tablespoon water

Dissolve coffee in boiling water
Cream fat and 2 tablespoon of sugar
Add remaining sugar and liquid alternately, beating until it is smooth and easy to spread.
